This spaghetti with chipotle sauce, beef, and cotija cheese is delicious with a touch of spiciness, just as we Mexicans like it. This recipe is inspired by many Mexican "abuelitas" whose one of their greatest pleasure is cooking for their family.
One of the best attributes of this chipotle spaghetti is that it is super easy and quick to make. Take a look:
Ingredients
(Serves 4)
1 pack of spaghetti
1 tablespoon of olive oil
400gr of ground beef
3 chipotle peppers in adobo, deveined and chopped (you can add more if you want it spicier)
1 cup chopped poblano peppers (optional)
700gr of crushed tomatoes
1 cup of water
1 1/2 teaspoons salt
Pepper to taste
1/2 cup grated cotija cheese
Instructions
Heat the olive oil in a medium casserole. Add the ground beef and cook until browned and crumbly, about 3-4 minutes.
Add the chipotle pepper, poblano pepper, and tomatoes. Season with salt and pepper. Let it boil gently for 5-7 minutes.
When the spaghetti is ready, strain it and add it to the sauce.
Sprinkle with Cotija cheese and serve.
