4 dried guajillo chilies (stems and seeds removed)
2 dried ancho chilies (stems and seeds removed)
2 garlic cloves
1/2 teaspoon cumin
1 cup water or stock
Toppings:
Shredded cabbage or lettuce
Sliced radishes
Diced onion
Chopped cilantro
Lime wedges
Dried Mexican oregano
Crushed red chili flakes
Instructions
Prepare the Broth: In a large pot, combine the pork or chicken, onion, garlic, bay leaves, and water or stock. Bring to a boil, then reduce to a simmer. Cook for 1.5-2 hours, skimming off any foam.
Make the Red Sauce (Optional): Soak the dried chilies in hot water for 15 minutes until softened. Blend them with garlic, cumin, and 1 cup of soaking liquid until smooth. Strain the sauce to remove any solids.
Add Hominy: Once the meat is tender, remove it from the pot, shred it, and set it aside. Add the hominy to the broth, along with oregano, cumin, and salt.
Incorporate the Red Sauce (Optional): Stir in the prepared chili sauce into the broth and simmer for another 30 minutes. Adjust seasoning as needed.
Combine Meat and Serve: Return the shredded meat to the pot. Serve hot in bowls, topped with your choice of garnishes.
