Red noodles, accompanied by tomato and chicken, are a very homemade recipe from Peru, surely the favorite food of many children. Its delicious sauce is enriched by the flavor of chicken, the stir-fry of vegetables, and the use of ají panca, a red pepper paste with a milder flavor than yellow pepper.
In this recipe we use another type of chili pepper, it is a dry pepper, Ají Panca, it is much less spicy than the rest of Ajís. You can find this product in our Peruvian specialties.
Ingredients
(Serves 4 people)
500 gr Noodles
300 ml Sifted natural tomato
4 teaspoons Ají Panca
500 gr Chicken meat
2 onions
2 garlic cloves
60 ml Olive oil
Pinch of cumin
Pinch of black pepper
Salt to taste
Instructions
Add the noodles and salt to boiling water for 6 minutes (follow the suggested time on the package)
Season the chicken meat with cumin, salt, and pepper, onions, and garlic
Add olive oil to a skillet and brown the chicken on the outside for about three minutes. Remove the chicken from the container
Add the onion to the pan, sauté for two minutes and then add the chopped garlic and the ají panca, and the fried tomato. Cook over low heat until the sauce reduces about 15 minutes
Add the chicken, when there are 5 minutes left
Add the noodles to the pan and mix with the rest of the ingredients, turn off the heat and let it rest for a few minutes. Pasta takes on a delicious flavor if you stir gently
Season with salt and pepper, and serve. Accompany with the chicken.
This recipe can also be made with minced beef, it is a recipe with a more pronounced flavor.
