Molletes with refried beans and cheese are the typical Mexican breakfast, this is a very easy recipe to make and everyone will love it.
In Mexico, molletes are a toasted bolillo-based dish and various ingredients, both salty and sweet. They are prepared by cutting a roll in half and taking each one, to put it on the comal or in the oven. After the bread is hot and toasted, it is spread with refried beans, a slice of cheese. And it is left on the comal until the cheese melts on the pan.
Mexican molletes pairs perfectly with a hot cup of coffee. You can add some variety of toppings to the molletes with salsas, cheese, and different protein choices.
Ingredients
(Serves 2)
2 Baguette Rolls cut into 6-inch sections each.
2 tablespoons soft butter
1 cup hot bayo refried beans
200gr of Chihuahua Cheese or Oaxaca cheese
½ cup of Pico de Gallo sauce (If needed Follow This Recipe)
Instructions
Preheat the oven, cut the bread lengthwise in half, remove part of the inner crumb and spread the bread with the softened butter, place it on a baking sheet. Grill for about 4 to 5 minutes until golden brown and crisp.
Remove from the baking sheet and spread the refried beans on the bread.
Top the bread rolls with cheese.
Put it back on the grill until the cheese has melted.
Serve with the Pico de Gallo Sauce or the sauce of your choice.
