Chilaquiles are a very popular dish in Mexico, especially for breakfast. The idea for this recipe came from the desire to be able to use the tortillas and chicken cooked from the previous day and transform them into a delicious dish that is now everyone's favorite.
The traditional way is to cook them with red sauce or green sauce, but there are also chilaquiles that are covered with mole or beans.
Chilaquiles are a delicious Mexican breakfast that is a must in Mexican family kitchens. That is why on Cloc Food, we are sharing with you an easy recipe to prepare for any occasion. We are using Herdez green sauce which has a mild spicy flavor.
Ingredients
(Serves 6 people)
24 corn tortillas or 4 cups of fried tortillas chips
350gr of Herdez green sauce
2 cups shredded chicken breast
2 cups of Cotija cheese
Fresh cream
Instructions
Cut the tortillas into triangles, place them on a tray and let them dry or bake for a few minutes.
Fry them in a skillet or deep fryer until golden brown. Remove excess oil using paper towels and place them in a bowl.
Pour the sauce into a saucepan and boil.
Place a bed of fried tortilla chips, add the chicken, onion and bathe with the hot sauce.
Add the cream and cheese.
This dish should be served at the moment so that the chips are crisp.
Chilaquiles are usually served with a side of refried beans, with an egg on top, and a few slices of avocado.
